Rad Recipe of the Month: Southwestern Coleslaw

Southwestern Coleslaw

2 cups shredded green cabbage
1 cup shredded red cabbage
1/2 cup shredded carrots
handful of cilantro, chopped
1/2 cup mayonnaise
1/2 cup sour cream
1/4 cup apple cider vinegar
2 tablespoons smoked paprika or a paprika based spice from our bulk spices such as chili powder, chipotle applewood rub, blackening seasoning
Salt and pepper to taste 

Mix together all the ingredients and enjoy. To make it, omit mayo and sour cream and use 2 tablespoons of olive oil instead.

Why did you want to move Downtown? Was it your job, family, friends?  I moved here after I matched at LVHN for residency.
What’s your job title? I’m an Internal medicine resident. 

How is your commute to the hospital? Not bad at all! It takes about 10 minutes to drive to Lehigh Valley Cedar Crest. 

Rad Recipe of the Month: Veggie Cream Cheese

Vegetable Cream Cheese

1 (8 ounce) package cream cheese, room temp. 
1 small carrot, grated or minced
1 small shallot, minced
1/2 large red bell pepper, diced
1 tablespoon chopped fresh parsley

In a large bowl, combine the cream cheese with the chopped vegetables and parsley. Serve on a Good Grain Sourdough Everything Bagel, which is delivered fresh each week on Fridays!
